Fruit soup


Fruit soup is a soup prepared using fruit as a primary ingredient, and may be served warm or cold depending on the recipe. Many recipes are for cold soups served when fruit is in season during warm weather. Some, like Norwegian fruktsuppe, may be served warm or cold, and rely on dried fruit, such as dried prunes, apricots and raisins, thus being able to be prepared in any season. Fruit soups may include milk or cream, sweet or savory dumplings, spices.

I have decided I will do Fruit Soups instead of Fermented Foods since I do that all the time anyway.

Fruit Soup:
Place the chopped sweet potatoes, carrots, apple, and onion in the pot. Stir and cook the apples and vegetables until the onions are translucent, about 10 minutes. Stir the lentils, ginger, ground black pepper, salt, cumin, chili powder, paprika, and vegetable broth into the pot with the apple and vegetable mixture

Watermelon Soup:
1. In a blender or food processor combine watermelon, lemon juice, lime juice, snipped mint, honey, and ginger. Cover and blend or process until nearly smooth. Cover and chill for 2 to 4 hours.
2. To serve, ladle soup into bowls. Top each serving with a spoonful of yogurt and garnish with mint leaves.

Strawberries Soup:
Puree strawberries, milk, cream and sour cream in a blender or food processor until smooth. Stir in sugar to taste. Chill 8 hours or overnight in refrigerator before serving.

Peach Soup:
Reduce heat; simmer, stirring occasionally, 10 minutes or until peach is tender. Remove and discard spice bag; let peach mixture cool. Process peach mixture in batches in a blender or food processor until smooth; stir in yogurt and ginger. Cover and chill; garnish, if desired.
